ANTR-4006EL – Food and Disease Prevention

The kind and amount of substances ingested is a major determinant of human health. This course looks at the evolutionary, cultural and historical reasons for dietary choices and their relation to disease patterns. The focus is also on: the kinds of foodstuff, lack of essential nutrients, and ingestion of artificial products that lead to disease; the evidence for and against dietary supplements and “health food”; weight control diets and special eating regimes; and dietary choices from worldwide cultures (e.g., Mediterranean and Asian diets) that seem to offer optimum protection against disease and maximize longevity.
